Banana Oatmeal Snack Cake

I love weddings. Such magic in the air surrounding them. Weddings in my family (of 5 children) always involved a week's worth of excitement leading up to the big day; with friends and relatives arriving from out of town, late nights finishing music playlists and favors, and last minute preparations being made -you almost didn't want the big day to come and wished the week could last forever. Knowing how busy everyone would be the morning of the weddding, my Aunt Nadine would always make a delicious breakfast spread of muffins & scones & fresh fruit - she'd create a respite before all the hustle & bustle of the wedding day began...such fond memories I have of all those mornings...

My dear friend Ginger, is getting married this Saturday. I've always admired my Aunt Nadine and so decided that I would try to "be her" for this wedding. This recipe sounded just right for this occasion - along with a fresh cup of black coffee I think it will be just perfect to nibble on before we head off to get our hair done...

Banana Oatmeal Snack Cake
1 c whole wheat flour
1/2 c flax meal
1 tbsp wheat germ
1/2 c brown sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt
1 tsp cinnamon
3/4 c oats
1 c mashed banana
1/3 c plain yogurt
1/4 c olive oil
1 tsp vanilla
2 eggs, beaten

Preheat oven to 350 degrees. Grease a 8x8 square pan, or a regular loaf pan. Combine all dry ingredients in a large bowl. In a smaller bowl, combine banana, yogurt, oil, vanilla, and egg, and stir well. Add wet ingredients to dry, stirring gently just until fully moistened. Spread batter into prepared pan, and bake 30-35 minutes (50-55 if using loaf pan), until toothpick inserted in the center comes out clean. Cool thoroughly and slice.

I know! Brad and I are going to be 400 pounds each if I don't stop it! Really though, I'm trying to be as health conscious as possible so everything really isn't bad for you, (okay minus the samoas!)Everything in moderation, right? :)
