banana blueberry bread

The smell of banana bread baking is one that immediately takes me back to my childhood. I grew up enjoying this bread, always wishing we could have it more often. Shortly after I got married, I asked my mom for this recipe and she gave me her original recipe card, handwritten by her sister (my Aunt Dee). There's something special about having handwritten recipe cards -so many of mine are torn out of magazines or the newspaper or printed from the internet. If you look closely at the card, you'll see banana is spelled with 2 n's...twice :) This bread is super moist due to the 1/2 cup of orange juice used and is by far my favorite banana bread recipe.



Banana Blueberry* Bread
2-3 large ripe bananas - mashed
1 C sugar
1 3/4 C whole wheat flour
1 egg
1/2 C orange juice (I've used pineapple before too)
1 t baking soda
1 t baking powder
3/4 t salt
1 t pure vanilla extract
1 T oil
Combine all ingredients and mix well in mixer. Pour into greased loaf pan. Bake for 1 hour at 325. Cool completely in pan on wire rack. Freezes well!


*I added 1/4 C of blueberries (quartered), but not needed!

Your picture looked so good, I woke up this morning and tried the recipe. God bless Aunt Dee. It's the best banana bread I've ever made.
