cilantro black bean salad

Last week I made the mistake of skipping dinner when I had to work late, then heading straight to our garden to help finish planting without eating. Of course the minute I arrived the hunger pangs started and then I was just a cranky mess. I decided rather than sticking around and risking death from starvation (alright, perhaps that's a bit of a stretch) I'd run and get something fast so I could get back to help out. Instead of running to get fast food (which I am adamantly against) I ran to Natures Bin and found a black bean salad in their freshly prepared foods section for $2! It definitely hit the spot and was sooo tasty. I decided to try and replicate it the following weekend for our picnic and it turned out even more delicious.

This dish is such a great meld of flavors - the olives are an unexpected addition, but work so well with the cilantro and peppers.

Cilantro Black Bean Salad

2 cans of black beans, rinsed and drained
1/2 red pepper, chopped
2 carrots, chopped
1/2 C black olives, halved
1/4 C cilantro, chopped
3 T olive oil
salt & pepper to taste

Combine and mix well. Refrigerate until serving.
