rosemary garlic white bean spread

Last night was the perfect night. The sort of night you wish for all winter long; not a cloud in the sky, just warm enough to go sleeveless with the slightest of breeze. We got to spend the evening outside with friends at Blossom Music Center watching the Cleveland Orchestra play. In my opinion the only way to end the long holiday weekend.

We made cold spicy noodles, crostades with rosemary white bean dip and I brought leftover strawberry shortcake cookies and guiltess chocolate chip oatmeal cookies. Our friends made french potato salad, tomato basil salad and homemade lemon cake. The weather, the atmosphere, the music, the company, the food, the wine - everything was just perfect. Can't wait for next time.

Rosemary Garlic White Bean Spread

2 T olive oil
4 garlic cloves, coarsely chopped
1 (15-ounce) can Great Northern beans, rinsed and drained
2 T fresh lemon juice
1 t finely chopped fresh rosemary
1/4 t salt

Heat oil in a small skillet over medium heat. Add garlic; saute 1 minute. Place garlic mixture, beans and next 3 ingredients in a food processor; process until smooth. Serve immediately, or cover and chill until ready to serve.
