lime spiked black bean dip

I'm throwing a bachelorette party for my good friend Ginger tomorrow night. Whenever I throw parties I always stress out about the menu - I want everything to be homemade, semi -healthy and not too time consuming. I spend hours searching the internet & all my cookbooks for just the right foods and usually it just ends up with me wasting a lot of time (& energy!) then throwing everything together at the last minute.

I decided to make it easy on myself for this party and besides asking others to bring food to share, I made this dip. Serve with fresh cut carrots & whole wheat tortilla chips.

Lime-Spiked Black Bean Dip
2 (15-ounce) cans black beans, rinsed and drained
1/2 cup fresh lime juice (about 2 limes)
1/4 cup finely chopped green onions
1/4 cup chopped fresh cilantro
1 teaspoon minced garlic
1/4 teaspoon salt
1/8 teaspoon ground red pepper
Place beans in a food processor, and pulse until almost smooth. Combine the beans and the remaining ingredients in a medium bowl, stirring until well blended. Let stand 30 minutes for flavors to blend.
