
I'm having a little trouble being patient these days. I'm longing for warmth and sunshine and springtime and good old Cleveland weather is doing what it does best - one 70 degree day, then back to the 40's the next. To put me in better spirits I decided to make one of my favorite summer recipes. This salad is super easy to throw together and very versatile - serve with tortilla chips as a salsa, stuff into a pita for a veggie sandwich or just enjoy as a side dish.


Tasty Bean Salad
2 cans cannellini beans, rinsed & drained
1/2 red pepper, diced
1/2 green pepper, diced
1/2 red onion, diced
2 cloves garlic, minced
2 T olive oil
salt & pepper to taste
Combine all ingredients & refrigerate for an hour or so to let flavors meld.
