tomato avocado salad

All of this gorgeous summer like weather we've been having has turned me into the queen of light meals! Here's another simple yet delicious dish that doesn't require much time in the kitchen.



Avocado Tomato Salad
1 half avocado, peeled, sliced
1 half ripe heirloom tomato, sliced
Juice from one slice of lemon
A pinch of coarse salt

Arrange slices of avocado and tomato on a plate. Sprinkle with lemon juice and coarse salt.

I actually decided to make a real salad of this dish and added all the remaining veggies from my fridge to it - red onion, squash, cucumber, and red pepper...it was the perfect lunch before we headed off to work in our garden yesterday. The lemon juice is all the dressing you need to balance all the flavors.
