you've been warned

Usually I can control myself around sweets. I can have a taste or two then put it out of my mind and leave it be. Not the case with this bread. I made the 2 loaves yesterday afternoon and by yesterday evening we were down half a loaf (I can't take full credit, Brad did help too). I had full intentions of freezing the other loaf, but we ended up having a short notice brunch party this morning, so it was the perfect complement to the potato/veggie/egg skillet Brad made. My brother-in-law Justin commented on the "cookie like" crust, which is the perfect description as the batter was definitely a cookie dough-like consistency. It was a lovely morning...sipping on coffee and enjoying the company of family & friends we get to see far less often than we'd like!

Apple Cinnamon Bread
1 cup oil
3 eggs
2 cups sugar
1 tsp. vanilla
3 cups apples, diced
3 cups flour
1 tsp. cinnamon
1 tsp. soda
1 tsp. salt
1 cup chopped walnuts (optional)
Combine and set aside the oil, eggs, sugar, and vanilla. Sift flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually. Add apples and nuts. Bake in 2 regular loaf pans or 3 foil loaf pans for 1-1/2 hours at 300°F. Cool 10 minutes in the pan. Sprinkle with sugar, if desired.

It sure was delicious. As soon as I have the chance I am making it! Perhaps you can bring it with for New Years :)

In case anyone wants to make this bread slightly more healthy, I made a batch of this last week, but realized I only had one cup of sugar half way through mixing it up. I just went ahead and made it that way, and the bread turned out fine, although I'm sure not quite so delicious
