I have yet to meet someone who doesn't like - no, love - peanut butter; alright perhaps I'm exaggerating a bit, but really I don't think I could trust someone who didn't love it. We probably go through at least 1 1/2 - 2 jars of peanut butter a month. It's the perfect companion to pretty much anything, so we like to add it to, well, pretty much everything. We usually buy fresh peanut butter from Heinen's or the farmers market, but I happened upon a recipe for peanut butter and couldn't believe how easy it was to make: unsalted dry roasted peanuts + food processor = delicious homemade peanut butter in less than 10 minutes. Now, of course, you can add whatever else you want to it (if you prefer the processed kind and have a bottle of high fructose corn syrup laying around, then by all means...) but in my opinion, less is more.

Really? That's *it*? You don't need to add oil or something to moisten it? Sounds too good to be true. What about salt?
Really! That's it! I was amazed as well. No salt or oil or anything is needed, apparently the natural oils in the peanuts is all you need.
If you're used to eating "natural" peanut butter, this is as good as it gets. If you're used to eating Jif, you might feel the need to add a pinch of salt.
Mmmm! Why have I not thought of this before? Wonder if almonds and macadamia nuts work too?

Yes, Heather - I can't wait to try almonds! We bought almond butter at the farmers market this past weekend and I can't stop eating it!
Another tip to note: Expect the volume of peanut butter to be about half the volume of peanuts.
