beat the heat (homemade frozen yogurt)

Beat the heat with this healthy tasty treat! Holy heat wave we've been having here! As much as I love the summer, I've never gotten used to the humidity. Temperatures upwards of 90 degrees = the need for ice cold treats.

While we were in Chicago, my sister took us to this delicious frozen yogurt place where the frozen yogurt was actually made from yogurt. My brother-in-law was definitely not a fan, but we were! It is quite different from traditional "frozen yogurt" that we're all accustomed to, but delicious nonetheless. The other night Brad whipped up this delicious treat after dinner and it definitely hit the spot!

Homemade Vanilla Honey Frozen Yogurt

1 C Plain low fat yogurt*
1 T pure vanilla extract
seeds of a vanilla bean (about an inch)
1/4 C honey (to taste)
Fresh grated cinnamon and nutmeg (to taste)
pinch of salt

Mix all ingredients together. Whisk briskly. Place in freezer for 20 minutes. Repeat whisking then freezing until desired consistency (at least 2 hours).

*(We only had about a cup of yogurt left which was the perfect amount for just the two of us).

the vanilla, cinnamon and nutmeg sounds very good in frozen yogurt....i make fruit frozen yogert and keep it in a ziplock bag inside the freezer...then just squeeze it a few times and it becomes perfect in about 2 hrs....isn't that easy ??
